Ingredients

2 C sugar
1/2 C vegetable oil
4 eggs
2 C white flour
3 tsp cinnamon
2 tsp baking soda
2.5 C grated carrots

Note:

You can experiment with other spices as well. I put in 1/2 tsp ground cloves and it tasted pretty good to me. What's the point in baking if you don't have fun?
Also, don't mix the wet and the dry ingredients until you've grated the carrots. If you mix too soon, the baking soda will get all bubbly and junk. Mix the wet and dry and then it goes straight into the cake pan, then the oven.

Frosting

Cream cheese frosting goes VERY well with carrot cake, and this is the frosting my mum's church cookbook recommended, so here we are.

1 package cream cheese
1/4 C butter
Some half-and-half
Powdered sugar

I honestly eat this stuff for breakfast, it's so good. And hey! It's got carrots in it, so it has to be somewhat healthy, right? Anyway, it's a good way to get your kid(s) to eat their veggies, without actually telling them what's in it. Same with Zucchini Cookies.
